  • Step 5 – Finally, pour into prepared pan and let cool completely.

Lift foil out of pan and cut into small squares. You don’t need much to satisfy your sweet tooth and a little goes a long way. It is the best.

Expert Tips:

  • Baking Pan – To easily remove the fudge from the baking dish, we recommend lining the pan with parchment paper or aluminum foil. Allow the parchment paper to overhang in the 8-inch pan to easily remove the fudge. We find that it is easier to cut in when it is not in the pan.
  • Melting Ingredients – While the mixture is heating on the stovetop make sure to stir constantly with a wooden spoon. This keeps the mixture from burning and it melts faster.
  • Adding Ingredients – If you are adding in nuts, coconut or cranberries add it in after melting the chocolate.
  • Sweetened Condensed Milk – We used evaporated milk in this recipe instead of sweetened condensed milk. Because of the sugar that is added the evaporated milk worked perfectly in this recipe.

How to Store Leftovers:

Store fudge in an airtight container in the refrigerator, you can also leave at room temperature. This fudge will last about 5 days if stored properly. If leaving in the baking pan, just cover with plastic wrap. I also suggest placing the fudge in between layers of parchment paper to prevent sticking.

What is the secret to smooth fudge that is not gritty? ›

To fix oily, hard or grainy fudge, scoop the fudge back into a pot with about a cup of water. Cook it over low heat until the fudge dissolves. Then bring the fudge back up to the temperature specified in the recipe and follow the remaining steps. The flavor may be slightly diluted, but the texture will be improved.

What makes high quality fudge? ›

You have to control two temperatures to make successful fudge: the cooking temperature AND the temperature at which the mixture cools before stirring to make it crystallize. Confectionery experiments have shown that the ideal cooking temperature for fudge is around 114 to 115 °C (237 to 239 °F).

How do you keep fudge creamy? ›

So, the key to smooth yet firm fudge, pralines, and fondant is to first bring the mixture to a high enough concentration and then let it cool off somewhat before starting to stir. And once you do start to stir, stir fanatically and without stopping for the finest, creamiest texture.

What's the difference between fudge and chocolate fudge? ›

Although fudge often contains chocolate, fudge is not the same as chocolate. Chocolate is a mix of cocoa solids, cocoa butter and sometimes sugar and other flavorings and is hard and brittle. Fudge is a mixture of sugar, dairy and flavorings that is cooked and cooled to form a smooth, semi-soft confection.

Why is Mackinac Island fudge so good? ›

To obtain the world famous taste, the fudge is slowly cooked in traditional copper kettles over a gas flame. Once the desired temperature is reached, the mixture is poured onto marble slabs for a cooling period and then hand-paddled into loaves.

Why is fudge unhealthy? ›

Fudge almost always has a pretty high sugar content as well as having some cream in it—both fattening. If you compare that to eating pure dark artisanal chocolate, it is a no-brainer. Dark chocolate of 70% cocoa or higher is considered a health food and often contains only two ingredients: cocoa and organic cane sugar.

Should I stir fudge while boiling? ›

Stir the ingredients to dissolve the sugar until the mixture comes to a boil. If your recipe uses milk, stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C (the "soft-ball" stage), do not stir it or even shake the pan.

Why is my old fashioned fudge not hardening? ›

If you didn't reach the correct temperature during the cooking process, it might not set properly. Use a candy thermometer to ensure that you reach the recommended temperature. Overcooking or Undercooking:Solution: Cooking the fudge for too long or too short a time can affect its texture.

Why is fudge so hard to make? ›

Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft. A temperature of 112°C to 114°C (234°F to 237°F) must be maintained. This will ensure the fudge has the ideal concentration of water and sugar. Fudge is difficult to make.

What is the ball method fudge? ›

According to most recipes, the ingredients of fudge are cooked to what is termed in kitchen parlance the soft ball stage, that point between 234 and 240 °F (112 and 115 °C) at which a small ball of the candy dropped in ice water neither disintegrates nor flattens when picked up with the fingers.

Why do you add vanilla to fudge? ›

Vanilla is often added to chocolate candies or other chocolate recipes because it complements and accents the flavor of chocolate.

What does cream of tartar do in fudge? ›

Cream of tartar is used in caramel sauces and fudge to help prevent the sugar from crystallizing while cooking. It also prevents cooling sugars from forming brittle crystals, this is why it's the secret ingredient in snickerdoodles!

Should you stir fudge constantly? ›

It is important to stir constantly with a wooden spoon until the mixture starts to thicken and its surface starts to look dull or matte. Now is the time to stop beating and pour the fudge into a mould. Another tip: Do not scrape the sides of the pan or the spoon used for stirring.

How do you keep fudge smooth? ›

If the sugar crystals are not properly dissolved before cooling, they can create a gritty texture. To avoid this, ensure that you stir the fudge mixture consistently and remove any sugar crystals that form on the sides of the pan using a wet pastry brush.

What would cause fudge not to harden? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.
