Ingredients
Rutabaga fritters
- 1 lb 450 g rutabaga
- 6 oz. 170 g halloumi cheese
- 4 4 eggeggs
- 3 tbsp 3 tbsp coconut flour
- 1 pinch 1 pinch turmeric
- ½ tsp ½ tsp onion powder
- 1 tsp 1 tsp salt
- ¼ tsp ¼ tsp pepper
- 2 oz. 55 g butter, for frying
For serving
- 8 oz. 230 g bacon
- ½ cup 120 ml mayonnaise
- 5 oz. (2½ cups) 140 g (600 ml) leafy greens

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Rinse and peel the rutabaga. Grate coarsely with a grater or in a food processor. Shred the cheese the same way.
Mix cheese and rutabaga with the other ingredients in a bowl. Let sit for a few minutes.
Form 12 patties with your hands and place in frying pan with a generous amount of butter. (Or use a large spoon and scoop mixture directly into pan.)
Fry on medium heat. Turn the patties after a few minutes. Lower the heat towards the end. Keep cooked fritters warm in a warm oven.
Serve with a green salad and a dollop of mayonnaise, perhaps flavored with herbs or paprika powder. And don't forget the bacon...
Tip!
Halloumi cheese is also known as grilling cheese, frying cheese or Queso Para Frier. Due to its high melting point, it holds its own while delivering a creamy texture—pure heaven in our book! Feel free to use spices of your choice to further enhance the fritters. Adding half a teaspoon of chili flakes or a tablespoon dried herbs will work magic

It's Hanukkah, and it's latke time. I decided to give these a try and I'm SO glad I did! I did make a few tweaks: my rutabaga (yellow turnip) was a quarter pound bigger, so I scaled the ingredients for another quarter pound. Halloumi cheese is only seasonal around here, so I used Queso Fresco instead which I can get any time. Added a big fat scallion and an extra egg yolk (plus the extra egg that was part of the scaling) I had left over from making the keto bread/buns on this site. Adjusted the other stuff by an added amount as well, and cooked using olive oil instead of butter. OK, so they aren't like the ones I made for years that had yukon gold and sweet potatoes, but I liked these just as well, especially with a dollop of full fat sour cream on top. This was a delightful treat! Plus, I expected to have 5 servings but they're so filling that I think it's more like 6 or 7.

Thought we were allowed up to 20g a day so what's wrong with 11g? Still leaves you with 9g for the other three meals!

I only had a block of cheddar cheese on hand, so I processed that with the rutabaga.....worked just fine and tasted great. I had quite a few for leftovers. I agree, nice alternative to latkes

I love rutabaga boiled and creamed with cream cheese and butter. But I have people arguing with me saying they are not Keto friendly. Say they are 33 grams of carbs. I don’t get it.

This side dish is on the higher carb side for our keto recipes, but with some foods, it's important to pay attention to quantity to minimize the carb count. Additionally the carb count we track is net carbs, not total, so the fiber is deducted.

I just made these using dairy free cheese - added some chilli flakes and plenty of seasoning and they were delicious! A real treat and a great way to kick off our Keto Diet for 2020.

I'm not completely sure, but I believe freezing may affect the texture of these in a negative way.

You could also use turnips, kohlrabi, daikon, or even broccoli stems.

I remember disliking them as a kid, probably because my mom boiled and then mashed & creamed them 😑 I shredded them and the only thing different I did was to use Panela cheese (available at WalMart) which is a Mexican white cheese which is also rubbery and crumbly. SO good! I served over a bed of greens and added some avocado. Used a low carb homemade poppyseed dressing from one of Kristie Sullivan’s cookbook. Delish! It’s been 3-1/2 hrs and I’m still stuffed! VERY filling.
